This pitaya (dragon fruit) smoothie bowl will brighten anyone's day! With a gorgeous pink hue it makes a beautiful smoothie, yet packed with with healthy goodness!
You will need:
- 3 bananas
- 1⁄2 cup purple pitaya (or 1 tablespoon pitaya powder)
- 1 tablespoon chia seeds
- 1⁄2 teaspoon vanilla
- 1⁄3 cup coconut milk
- Peel three (ripe) bananas and measure 1⁄2 cup purple pitaya. Transfer into a ziploc bag or airtight
container. Set in the freezer overnight.
- In a high speed blender, combine frozen bananas, frozen pitaya, chia seeds, vanilla, and coconut
milk. Blend until smooth.
- Transfer into bowl and add toppings of choice. Serve.
