Dragon Fruit Smoothie Bowl

This pitaya (dragon fruit) smoothie bowl will brighten anyone's day! With a gorgeous pink hue it makes a beautiful smoothie, yet packed with with healthy goodness!

You will need:

  • 3 bananas
  • 1⁄2 cup purple pitaya (or 1 tablespoon pitaya powder)
  • 1 tablespoon chia seeds
  • 1⁄2 teaspoon vanilla
  • 1⁄3 cup coconut milk

Instructions

  1. Peel three (ripe) bananas and measure 1⁄2 cup purple pitaya. Transfer into a ziploc bag or airtight
    container. Set in the freezer overnight.
  2. In a high speed blender, combine frozen bananas, frozen pitaya, chia seeds, vanilla, and coconut
    milk. Blend until smooth.
  3. Transfer into bowl and add toppings of choice. Serve. 
Makes 1 large or 2 small servings - Enjoy!
